So, when people (namely The Deputy) start to squawk about not having any cookies in the house and I don't have the time (or the ambition) to stand in the kitchen and bake, I make these.
My mom didn't do a lot of chocolate chip cookie baking when I was a kid, but I do remember her making these a lot. They were a much quicker alternative to all that scooping and cookie sheet exchanging that goes into making cookies.
Besides...they're a great companion for ice cream. I know, it's Decmber, but is it really ever TOO cold for ice cream?!? Nahh, I didn't think so. (If there's anything I love as much as cookies, it might be ice cream...or popcorn.)
These cookie bars are as tasty as they are simple to make. They don't require any fancy equipment or any sort of fancy ingredients. They're basically a chocolate chip cookie in a 9x13 pan...which means you can take as much or as little as you would like. And for you brownie lovers out there the edges are just as fabulously chewy as a brownie edge.
These were the only thing The Deputy ever requested while he was at the Maine Criminal Justice Academy...and of course I obliged.
Academy Bars (aka - Tollhouse Cookie Bars...aka - Lazyman's Cookies)
3/4 Cup Softened Unsalted Butter
3/4 Cup White Sugar
3/4 Cup Packed Brown Sugar
3 Eggs
1 Tsp Vanilla
2 Cups Flour
2 Tsp Baking Powder
1 Tsp Salt
Chocolate Chips
Preheat your oven to 350 degrees and prepare a 9x13" pan by greasing with shortening or spraying with a pan release spray.
In a seperate bowl combine the dry ingredients and set aside. Cream together the butter and the sugars until light and fluffy. Add eggs one at time, beating well between each addition then add the vanilla. Add the dry ingredients to the creamed mixture about a cup at a time until it's all combined and happy. Stir in the chocolate chips and then dump the batter into your prepared 9x13 pan and spread out evenly.
Bake in your preheated oven for about 30 minutes. The edges should be golden brown and the middle should be brown and the batter should be set. The Deputy likes these a little on the gooier side, so we bake ours for about 30 minutes. It's completely up to you.
Once they're cooled (or you can risk burning your mouth like we do), cut and eat!
Some people might consider these blondies with chips...those people are anti-cookie and I say...poo on them.
